Too light and too fat

Compared to the target specifications, these carcases are too light and too fat for this market.

The cuts from these carcases will require considerable trimming of excess fat to make them acceptable to customers. This is wasteful and costly, and along with their light weight, will result in cuts too small for customers in this market.

The cattle are too early maturing and are probably better suited to a lighter weight market where they can be turned off earlier, before they get too fat.
